The first Mennonites came to Belize in 1957 as part of a diplomatic mission. These Mennonites, who emigrated from various Canadian locations, came to Belize (British Honduras) from Chihuahua, Mexico, where they had been living for many years. They met with then Premiere of the country and father of Belize, George C. Price, to discuss making this tiny country their new home. In return for allowing them to stay in Belize, the Mennonites brought with them large-scale agriculture which there was a great need for in the country at the time. George Price granted them the freedom to live and farm, freedom to practice their religion, and a promise that their children would not be required to serve in the armed forces. As such, in 1958, the first colony of Mennonites was established in Spanish Lookout, located approximately 34 kilometers from what is now the capital city of Belmopan. Honey hunting is threatened by several things: the decreasing number of honeybees due to climate change; the dwindling number of honey hunters, as more and more young people in the tribe are reluctant to learn the craft; the growing medicinal reputation of Himalayan honey, which has resulted in the government opening honey-harvesting rights to contractors instead of indigenous tribespeople so that honey can be exported and sold to people in other nations; and the increasing commercialization and offering of “honey hunt tours” to tourists, which leads to the depletion of resources for traditional honey hunters.

Analies Gómez Coyula is deep into her third bowl of helado (ice cream). Her boyfriend, Daniel, is equally engrossed as he spoons up his 13th scoop of vanilla. Aunt Ana Lidia seems content, with two ensaladas – five scoops apiece – already devoured. She unfurls an abanico and fans herself against the heat of Havana in May, then ladles the contents of her third bowl into a plastic container to take away. I feel abstemious in comparison with my single ensalada mixta of five flavours, topped with caramel sauce and crushed cookies. We’re at Parque Coppelia, the world’s largest ice cream parlour and an iconic institution in Cuba. Taking up an entire block diagonally opposite the Hotel Habana Libre in the once-tony Vedado district, this state-run ‘people’s park’ offers a for-pennies indulgence for the masses and serves an average of 30,000 customers a day – and up to 600 at any one time. When Havana sizzles, the entire city seems to descend seeking relief. The helado – served with taciturn efficiency by waitresses in 1950s plaid miniskirts – wins no awards. But no other experience speaks so sweetly to Cuba’s revolutionary idealism.

The bar, which for a long time had been known as “dead,” was reborn by the efforts of Gonzalez as a non-farm cooperative, a type of business arrangement for the self-employed promoted by Raul Castro’s government beginning in 2012. In just under six years, more than 420 Non-farm Cooperatives (CNA) have been authorized in the country, with more than 12,000 members, the vast majority of them dedicated to food service, commerce, other services, construction and industry. Although the cooperatives are going through uncertain times because of the fear of an announcement of measures that would restrict their autonomy, that of the González brothers had the wind in its sails. With its 15 seats around the bar in the shape of a knife on the fashionable corner of Vapor and Principe, the establishment attracted a parade of announcers and actors from nearby Radio Progreso, regulars from the surrounding neighborhood, and even ecstatic foreigners who came looking for the real authentic touch that Silvia’s still retains. The corner was renewed. The facades etched by humidity received new paint and the wooden bar, polished by the elbows of its customers and their glasses, was restored. In a videoclip of the song Más Macarena*, recorded by Gente de Zona and Los Del Río, the transformation that was beginning was already visible. Above the bar is a tourist accommodation with large windows that rents through Airbnb.

If you make a clever east-bound turn off Highway 198, you’ll drive up one of the worst and windiest twenty-five mile sections of paved road in Central California. It’s a good hazing, though—make it through and you’ll be rewarded with the most magnificent subalpine valley surrounded by snow-tipped peaks. And the best part? No crowds. The glacial valley dubbed ‘Mineral King’ lies in a portion of national park buried deep in the south-east region of Sequoia National Park, and has its own entrance (one that often evades even the savviest of national park enthusiasts). With a rich history steeped in mining and exploration, it feels like you’ve stepped back in time among the ancient shingled cabins scattered around the valley. At one time, Disney had plans to put a full scale ski resort in this valley. Thankfully that fell through, and it became part of Sequoia National Park.
