The internet, or at least as far as I’ve seen, has three favorite peanut butter cookies. The first is a thing where you take a peanut butter cookie dough or prepared chocolate chip cookie dough, press it into a mini-muffin tin, press a miniature peanut butter cup inside of it and bake them together. Nobody has ever made these for me and I’m kind of mad about it. The second is this 4-ingredient, one bowl, hand-whisked salted peanut butter cookie, curiously absent in flour, butter and leaveners, that’s been around forever until the clever cooks at Ovenly figured out that using brown sugar instead of white, them into larger half-domes, and covering them with sea salt raised them to the unforgettable. The third is a soft chocolate cookie wrapped around a peanut butter filling and bakes into peanut butter cup cookies. No wait, pillows.
Until 500 years ago, the spice was confined to Central and South America. We track the heat wave through Jamaica, Hungary, and Thailand. THIS IS WHAT HAPPENS when you bite into a chile pepper: A full load of the chemical capsaicin — the compound that makes peppers hot — floods your tongue and throat, binding to pain receptors and shooting an insistent S.O.S. message to the brain that, essentially, your mouth is on fire. The heat can be dry or juicy; it can sidle in, strafe, or scorch; it can strike the tip of your tongue, the insides of your cheeks, the back of your throat, or everywhere all at once.

Pabst encroaches upon the whiskey market Pabst Blue Ribbon, the cheap beer that became a hipster fixation in the early aughts, is likely getting a whiskey counterpart. New Holland Brewing Co., a company that distributes its products through Pabst Brewing Co., received approval last month from the Alcohol and Tobacco Tax and Trade Bureau for a Pabst Blue Ribbon Whiskey label. An inscription on the packaging reads, “This is Pabst Blue Ribbon Whiskey. Made from nature’s choicest products that, legend would have it, Jacob Best used in 1844 to provide its smooth, complex flavor.” The label also apparently notes that the spirit was “aged five seconds.” Although the whiskey market is new territory for Pabst, New Holland Brewing Co. has some experience distilling whiskey along with gin and vodka. When reached for comment, a representative for PBR told MiBiz, “We are just not quite ready yet as several details [are] still up in the air.” No word yet on when this new PBR whiskey will see the light of day, but the perfect time for this release would have actually been five years ago, when the whiskey boom was still raging.

Readers who have had the misfortune to encounter a Hershey bar will know exactly what I’m talking about. It’s wretched stuff isn’t it? If you are in possession of a sound mind and a few functioning taste buds then I don’t see how you can possibly enjoy US chocolate. It tastes like sawdust that’s been drowned in sugar and soaked with baby vomit. It tastes like that, by the way, because that’s roughly what it is. American chocolate (I’m talking about the non-fancy stuff) has a lot more sugar and a lot less cocoa than its European counterparts. Some producers also allegedly put their milk through a process called controlled lipolysis which produces butyric acid. What’s that when it’s at home? It’s something that’s found in vomit. God knows what else Americans get up to in their chocolate factories. A lawsuit recently filed in New York alleges that Hershey, which has the licence to produce Cadbury products in the US, “fails to disclose” that some of its chocolate products “contain unsafe levels of lead and cadmium”.

What the craft cocktail renaissance was to the aughts, the faux dive bar is to the teens and now ’20s. In New York, this is embodied in places like Ray’s on the Lower East Side, a painstaking replica of a dive (owned by actor Justin Theroux), and the Holiday Cocktail Lounge, an upscale joint inhabiting the cadaver of a real former dive in the East Village, and, of course, Dolly’s. The rise of faux-dive bars correlates to the decline of real dive bars, of which maybe a handful still exist in New York. These include Billymark’s West, Lucy’s and Milano’s. Each of these beer-soaked, time-worn, slightly sorrowed spaces leads the precarious, tenuous existence of an outlaw holdout. Both the real and the faux dive appeal to New Yorkers exhausted by the try-hard tropes of nightlife. Many of us moved to New York precisely for the chaotic ozone in which dive bars flourished. And whether or not it was dead by the time we arrived, the familiarity of a laminate wood–paneled room illuminated by neon has the ability to remind one of home, real or imagined. Home: a place without a shtick, sweatpantsville, a refuge from agenda.
